Shibui Robata Bar is Toronto’s first authentic hot charcoal robata experience offering meats, seafood and vegetables slow-grilled to perfection in the traditional robatayaki style. Shibui offers an array of robata grill items but also serves up some modern Japanese starters, sushi rolls, sashimi, and unique cocktails.

Chef Masaki Nakayama was brought in by restaurant owners Jeremia and Michael Rudan who also operate the very popular Copacabana Brazilian restaurant which is situated on the upper level of the establishment. Chef Nakayama brings extensive masterful robata experience to Shibui from having worked at some paramount New York City restaurants such as Mr. Robata and Sushi Yasuda as well as Zuma in Miami.

I showed up to Shibui with a hungry stomach because sushi tends to fill me up real good and as always I overindulge.  I was happy to try the sushi rolls but was even more excited to sample the robata grill items which were all cooked precisely to bring out the natural flavours of the foods! Here are some highlights of what I tried:
 Robata Grill Corn with Yuzu Butter Sauce

 Kinoko Salad - Soba Noodles, Japanese Mushroom, Ponzu Dressing

 Pirikara Ebi Maki - Crispy Fried Shrimp, Asparagus, Cucumber, Chili Mayo Sauce

 Robata Grill Sweet Potato with Red Miso Sauce

 Vegetable Maki - Sweet Potato, Avocado, Shiitake, Yamagobo, 
Asparagus, Red Pepper on top

 Shibui Salmon Maki - Spicy Salmon, Tempura Flakes, Salmon on top

 Robata Grill Chilean Sea Bass with Teriyaki

Robata Grill Lamb Chop with Spicy Korean Miso Glaze


Assorted Sashimi & Nigiri Sushi
 Ume & Yuzu Mojito - Rum, Yuzu, Plum Syrup, Shiso Leaf

Pink Blossom - Vodka, Elderflower, Pink Grapefruit, Orange
Kyuri Sake - Gin, Sake, Cucumber, Yuzu

Out of all the expertly prepared foods I sampled, I would have to say that the lamb, kinoko salad and spicy salmon sushi really blew me away.  The lamb was succulent and flavorsome, the salad crunchy with a tangy ponzu dressing and the salmon sushi was fresh, rich and pleasantly spiced. My fav cocktail was the Kyuri Sake because I'm a sucker for drinks with refreshing cucumber and this one was crafted perfectly.

The delectable fare is enough to make me come back, but I was also pleased with the chic and trendy atmosphere, the lovely open-kitchen concept and the welcoming staff. Domo Arigato Shibui!

    So difficult to decide :)
    A must try is the grilled corn and Kyuri Sake- so yummy!
