Apple Cardamom Muffins - Vegan

I was in a real baking mood this weekend and was having such a hard time trying to figure out what I wanted to make.  I surprisingly didn't want to make anything with chocolate, but something with a more exotic flavor.  I went to my pinterest board where I save all the goods and came across a recipe for apple and cardamom muffins. They sounded really perfect to what I was craving and since I never really use cardamom in recipes I was excited to try it out.  The only one time I have tried cardamom was in chai tea and the vanilla spiced latte from Starbucks...so as you can see, my knowledge of the spice is not too profound.

For those of you who aren't too familiar with cardamom, it is an aromatic spice from South India and Sri Lanka. The cardamom seeds come in small pods and come from a plant belonging to the ginger family. You can use the whole pods in dishes or just extract the seeds and grind into powder. I’ve only used the ground cardamom and its grayish in colour and has such a warming and distinct smell to it.  It’s really hard to describe the flavor that cardamom brings to recipes but if I had to shout out the first 4 words that came to mind it would be, gingery, cinnamon-ish, warm spiced, and citrus.  It is becoming a favourite spice of mine and I can’t wait to discover more recipes that I can use cardamom in.

These muffins ended up being exactly what I felt like.  I could taste the cardamom and lemon zest and it was SO delicious and had such a unique taste, unlike any conventional muffin I have had lately.  It went really well with a nice tea and almost had a comforting effect after eating it.  The applesauce and fresh apple slices on top gave the muffin a slight tartness to them and the vanilla extract was noticeable too.  For a vegan muffin, these really turned out amazing. I brought them to work and none of the girls thought they were vegan muffins at all.  A great texture too, not dry at all but super moist and fluffy. This one is a keeper folks!


Cardamom Apple Muffins – Vegan
 Ingredients:
1 3/4 cups all-purpose flour
1 tablespoon baking powder
1/4 teaspoon salt
1 teaspoon ground flax seed
1 teaspoon ground cardamom
1/2 cup canola oil
1 cup raw cane sugar or white sugar
1/2 cup unsweetened applesauce
1 teaspoon vanilla extract
1 cup soy milk (almond milk would prob be fine too)
lemon zest from 1 lemon
2 apples sliced (I used Gala apples)

Directions:
1. Preheat oven to 350 degrees F.
2. Stir the flour, baking powder, salt, flax seed, and cardamom together in a bowl; set aside.
3. Mix well the oil, sugar, applesauce, vanilla, milk, and lemon zest.
4. Mix the flour mixture into the wet ingredients until just incorporated. Divide the dough into the prepared muffin cups.
5. Place two to three apple slices on top of each muffins.
6. Bake in the preheated oven until golden and the tops spring back when lightly pressed, about 20 to 25 minutes (keep an eye on these, the original recipe said 35 mins but mine were finished MUCH sooner)
