Another What I Ate Wednesday! Lots of good eats so far this week and I’m happy to say that I've completed round 2 of the Jillian Michael’s BodyShred Class. I slightly like it better now that I’m learning the moves. The exercises are still really hard though and I find myself struggling with the transition between moves. Before you know it 30 seconds of the dancing crab is up and you're quickly grabbing for weights to do tricep curls. Some of the moves I can’t even do and since there is no break in-between moves, I’m left panting and sweating and laying on the floor for a few seconds lol The instructor yelled out to us ‘IF JILLIAN MICHAEL'S WAS HERE SHE WOULD NOT BE HAPPY WITH YOU GUYS’ I think it was directed right at me but I spotted a few other lazy bones in the class too. I’m going to stick to it though because it’s only a 30 minute class, hopefully it gets better and I get stronger!
Breakfast
this week has been these delicious Morning Glory muffins I made over the weekend. These are filled with carrots, pineapple, apples,
walnuts, raisins and some other yummy ingredients. They are the perfect breakfast muffin and low
in calories too! I will share the recipe with you guys in a few days.
My morning snack
has been these really awesome ERG! Bars. These fruit & nut bars are made with
natural and raw non-GMO and gluten-free ingredients that are tasty, easy to
consume, and packed with natural energy. The ERG bars look small but they are
really filling and leave you feeling satisfied and full of lasting energy. Such a great pre-work out bar!
Erg! Comes in
5 flavours: Original Cashew Raisin, Apple Ginger, Apricot Peanut Butter, Pecan Date and Choco Cherry.
So far I've tried the Pecan Date, Apricot PB and Apple Ginger.
Both had a really good balance of fruit and nut and the bars were chewy
but also had the texture of baked oatmeal. The apricot PB was the best so far as I loved the sweetness of the apricot paired with the creamy nutty PB. These are really great to pack in your bag for a healthy snack during the day!
Lunch this
week has been a carrot, sweet potato and chickpea soup I made. It’s really filling and full of Moroccan spices, so good!
Afternoon
snacks have been all over the place, I've had a mixture of nuts, fruits, some
cookies and popcorn.
Dinner today
was a really healthy meatless meal of zucchini ribbon pasta with sauteed cherry
tomatoes, garlic (LOTS), spinach and mushrooms.
It was incredibly easy and super tasty.
Yesterday was another meatless meal, a vegetable pizza!
Happy Wednesday!

I love Morning Glory Muffins! That class looks intense. It's kind of how I feel after I do some of the "classes" in my xbox Kinect Games haha.
ReplyDeletethose zucchini ribbons are so pretty!!!
ReplyDeleteWhoa, your muffins look SO tasty. And your meatless meals are totally up my alley - both the zucchini "pasta" and the pizza look absolutely irresistible. You're making me hungry now! =D

DeleteHi Natalie,
ReplyDeleteThese ERG! Bars sounds really cool to me. I must admit it is tough eating healthy... There are so many good foods and temptations around these days.
Zoe
Natalie, your Morning Glory muffins do look wonderful. I haven't made those for years, but I am not a fan of coconut. I feel your pain and can almost see you on the floor it taking every last ounce of energy to get back and to keep going. The pizza looks amazing.
ReplyDeleteThat class sounds terrifying :P But those muffins look delicious! I'll look forward to the recipe :)
ReplyDeleteLooking forward to your recipe for those morning muffins!
ReplyDeleteI always like to think what would Jillian say if she was standing over me as I was ready to stop something during a workout
And now I'm craving pizza.....guess what I'll be having for dinner tonite LOL.
ReplyDeleteI know what you mean about transitioning moves in your class. I do a lot of zumba, and getting the moves down is hard, but I think the more I do it, the better I get at it. You'll get the hang of it and just think - you're burning calories as long as you are moving!
Yeah it totally takes a few classes to really adapt to the moves, I had that trouble in Zumba as well but in the end I loved it!
DeletePretty fun day of eats! The zucchini dish looks so fun =)
ReplyDeleteKeep up at the exercise class, in a few weeks, you'll be able to keep up and be happy you stuck with it!
Great inspiration for healthy meal ideas! Everything looks delicious. It feels so good to take care of yourself, doesn't it? Btw, I cannot imagine taking any type of Jillian Michael class - woah! : )
ReplyDeleteSo dang yummy! Don't give up on the aerobics. You will catch on. Keep it up!
ReplyDeleteEverything looks really tasty but that pizza has me drooling.
ReplyDeleteGood for you for sticking it out! There is no way I could ever do a class like that! I can't wait for that muffin recipe!
ReplyDeleteAll of your food looks incredible! Were you swearing at that instructor in your head? I would have been. :)
ReplyDeleteI would have been thrilled to sit at your table for any of your meals.
ReplyDeleteI love the veggie pizza. Looks really appetizing and healthy as well.
ReplyDeleteLook forward to your muffin recipe!
My mouth is watering looking at that pizza!!!
ReplyDeleteI do Jillian Michael's 30 day shred DVD's at home and just moved to level 2! Her workouts are so hard, but it'll pay off :)
That veggie pizza looks fantastic!
ReplyDeleteBeautiful muffins and that zucchini ribbon pasta looks amazing! How do you prepare you zucchinni ribbons
ReplyDeleteI just used a regular vegetable peeler :)
