It's Monday
and I know its going to be a long and busy week ahead! I hope you all had a
great weekend though. As much as I hate Monday’s I'm looking forward to the 3
hour long finale of The Bachelor tonight.
I am all sorts of addicted to that show so that's how I’m spending my
evening haha! I will also have these PB Millet Squares in hand because they are
pretty much my new favourite snack!
I found this
recipe over at The Creamline and thought it looked really good. I also like that it is
similar to rice krispie squares but much healthier. I still have a strong love for a good ol rice
krispie square but all of that marshmallow and butter really isn't the greatest for you. The process in making the
squares is very similar to making rice
krispie squares so its fairly easy and a fail-proof recipe. Instead of rice krispies I used millet puffs that
I found at Bulk Barn, but most health food stores should carry them. For those of you that aren't familiar with
millet, it is a tiny grain that is mainly used in bird seed! Don’t let that
scare you though, millet pretty much has a mild sweet and nutty flavor and it
absorbs whatever flavour you add to it quite well. It can be used in cookies, pilafs, salads,
etc Millet is highly nutritious, non-glutinous and like buckwheat and quinoa,
is not an acid forming food so is soothing and easy to digest.
These squares took me about 10 minutes to prepare and then I let them
firm up in the fridge for about an hour.
You can also put them in the freezer for a shorter period of
time. The squares tasted great and were
very peanut buttery in flavor. I am
really glad I added the chocolate on top as it literally is the topper! The squares are not crispy like a rice
krispie but rather chewy and light thanks to the millet puffs. I must warn you that these are very addictive
and now I have my whole family asking me to make another batch!

Peanut Butter Millet Puff Squares
Ingredients:
Chewy Peanut-Butter-Millet Bars
3/4 cup natural creamy peanut butter,
well stirred
1/2 cup honey
1/4 cup light agave nectar or maple
syrup
1/2 teaspoon salt
1 teaspoon vanilla extract
4 cups puffed millet cereal
2/3 cup high-quality semisweet
chocolate chips (optional)
Directions:
1. Line an 8×8
baking pan with parchment paper. In a pot large enough to hold the puffed
millet, heat the peanut butter, honey, agave nectar, salt, and vanilla over
medium, stirring until it is well mixed and hot (but not bubbling.) Remove from
heat and add the millet cereal; mix until well coated.
2. Transfer
mixture to prepared pan, pressing into an even layer; let cool. Melt chocolate
chips in the microwave and spread in an even layer over millet bars. Let cool
completely, cut into squares and serve. Makes 16
squares.

ReplyDeleteMillet is one of my recent discoveries, and I love adding it uncooked to banana breads and all sorts of goodies for extra texture. Great idea to use a puffed version for a healthier take on a classic treat.
ReplyDeleteThis looks so much better than your average rice crispy treat! I do love puffed millet, but every time I buy some for a recipe, I end up with a huge leftover bag and nothing to do with it. This would easily take care of that problem! ;)

ReplyDeleteThis no-bake slices look wonderful. I don't think puffed millet is available in our local supermarkets and reckon should be ok to substitute these with easily-available rice puffs.

You now have wanting to go out in search of puffed millet! These sound so interesting - I love the idea that it's chewy and lighter than the rice krispie version. Sounds like the PB and chocolate add just the right amount of richness, too.
