Side Dishes.

Side dishes are sometimes my favourite part of a meal.  So many options and variety in pairing the sides with the main entree.  I remember as a kid the side dishes were always pretty bland, a can of corn or baked beans, or mccain french fries, gross!  Here are 2 delicious side dishes that can accompany any meal! Your guests will be impressed!



Oven Roasted Potatoes with Bacon, Garlic and Parmesan



Ingredients:
3 pounds potatoes (‘baby’ or about 2 inches wide)
4-6 slices bacon, cooked, chopped into bite-sized pieces
2 tablespoons olive oil
3 garlic cloves, roughly chopped
salt and ground black pepper
Fresh grated Parmesan cheese
1/4 cup chopped flat-leaf parsley, minced
Directions:
1. Preheat the oven to 400 degrees. Cut the potatoes into 1 inch chunks and place in a bowl. Toss with the olive oil, salt and pepper and scatter over the baking sheet covered with parchment paper.
2. Bake the potatoes for 20 minutes and then add the garlic to them, toss and bake for another 5 to 10 minutes or desired tenderness.
3. While the potatoes are in the oven, cook the diced bacon in a frying pan until crispy.
4. Remove the potatoes and place them in a large bowl or serving dish.  Grate fresh parmesan over the potatoes and scatter the parsley and bacon on top.

Green Bean Casserole

Ingredients

  • 1/3 stick butter
  • 1/2 cup diced onions
  • 1/2 cup sliced fresh mushrooms
  • 2 cups sliced green beans
  • 3 cups chicken broth
  • 1 (10 3/4-ounce) can cream of mushroom soup
  • 1 (2.8-ounce) can French-fried onion rings
  • Pinch House Seasoning, recipe follows
  • 1 cup grated Cheddar

Directions

Preheat the oven to 350 degrees F.
Melt the butter in a large skillet. Saute the onions and mushrooms in the butter. Boil green beans in chicken broth for 10 minutes and drain. Add the green beans, mushroom soup, onion rings, and House Seasoning, to taste, to the onion mixture. Stir well. Pour into a greased 1 1/2-quart baking dish. Bake for 20 minutes, then top the casserole with the Cheddar and bake for 10 minutes longer, or until the casserole is hot and cheese is melted.

House Seasoning:

1 cup salt
1/4 cup black pepper
1/4 cup garlic powder
Mix ingredients together and store in an airtight container for up to 6 months.

  1. Side dishes do always seem to steal the spotlight, especially at big holiday dinners. I don't mind in the least bit though, as I always think that the veggies are the best part! Your potatoes in particular look wonderful, and I can see why they'd get all the attention.
